Today is the day many of us have been waiting for, the unofficial first day of fall, when Starbucks brings back their famed pumpkin spice latte. Love it or hate it, this sweet but a bit spicy drink, which first launched in 2003 isn’t going away any time soon. As if that weren’t enough, Starbucks is also debuting the new Pumpkin Cream Cold Brew today.

The appeal of this flavor isn’t entirely about the taste. Rather, explains Erika Folinsky, LCSW, pumpkin spice’s popularity may be more about a feeling or emotion. “Pumpkin and the pumpkin spice latte is definitely more than just a trend, but the limited availability of it does play into its popularity,” she says. “Scent is highly linked to memory and emotion, even the desire of an emotion. Pumpkin spice lattes evoke the idea and feeling of being warm and cozy and safe. Its Thanksgiving, even if Thanksgiving wasn’t positive, the desire for it is to be positive. Pumpkin spice lattes are basically that picture of being bundled in a warm sweater and how that felt like the best hug in the world.”
